Organic, biodynamic, or sustainably farmed. Sourced from small and mid-size producers. Minimal to no irrigation when possible. Minimal intervention, which may include: No added sugar or water to reduce sweetness. Minimal fining and filtration. Low sulfites whenever possible. No oak chips, staves (thick oak sticks), or flavorings. No flash pasteurization. No manipulation of must (freshly pressed juice), such as reverse osmosis, centrifuge, or watering back. No use of dimethyldicarbonate (DMDC) known as Velcorin, a chemical preservative used to sterilize and de-alcoholize. No use of poly vinyl poly pyrrolidone (PVPP) to reduce bitterness and correct color.
